Profitroļi
Profitroļi is a real Malēnieši (the borderland people) food. It is a well-known fact that Malēnieši are hospitable people, who make their guests welcome as soon as they arrive. This personal quality is inherited and preserved from generation to generation. If, in the past, an unexpected guest arrived, but the hostess had only a couple of eggs, broth, some fat in a clay pot and a pinch of flour in the pantry, she decided to deep-fry drops of dough in fat, called them profitroļi and served them in hot broth with fresh herbs. The guest marvelled at the meal and praised its taste.
So, year after year, when celebrations are held in Alūksne, the broth with profitroļi is always served, keeping the tradition alive.
